No cheese where there is fish (you can use salmon indeed) and I do not add cream but a little of the cooking water at the end to ensure that it doesn't get too dry. Shall post the recipe on LJ.

Can I make this with tinned salmon . the tuna fish we get here is crap?
I assume otherwise you proceed as normal. Do you put cream in with the eggs and cheese or just the E & C?

Om, nom, and indeed NOM!
I've always been afraid to try a proper carbonara because of the raw egg. Maybe I should just throw caution to the proverbial wind and do it.
It does cook in the process, Jess, so you should not be so worried.
Recipe is there
Mmmmmmm. I'm going to have to try your recipe. I've never done a homemade carbonara either. I do love the pasta.
