The recipe was spurred by this one, but I just made use of the fact that I has oxtail broth ready (complete with carrots) that week and just cooked my lentils in that (20 minutes). Then I just added the poached egg on top. Dead easy.
Thanks for that link. I have some bones in the freezer that have been wanting to be turn ed in to stock. Can't get chorizo here, but a good quality kielbasa and a fresh chili should do as a substitute.
